Confidentiality as a brief
Full privatisation, a small and known staff, no outward signage, no online trace of the stay: these requirements are settled well in advance, never on the day itself.

- The morning's work, in a closed drawing room, with no interruption to service.
- Lunch, brief and served on site, so as not to break the thread.
- The evening, a single table and seasonal cooking, where the essentials are said.
